INGREDIENTS Quantities tosuitof
Flower sprouts, larger ones halved Sirloin, fillet or rump steak, cut into strips
Coarsely ground black pepper Oil and butter for frying Cr&me fraTche, drop of milk and horseradish sauce to serve
1 Stir-fry the sprouts in one pan in a little oiland the steak, seasoned with pepper, inanother pan, for 3-5 minutes.
2 Allow the steak to rest on awarmed plate while you transfer the sprouts to serving plates. Pour any pan juices over the steak before arranging on top or beside the sprouts.
3 Thin the creme fraiche with a little milk and stir in adollop or two of horseradish sauce to taste. Serveseparately.
1 Fry mushrooms and pepper until almost tender,addingthe chilli towards the end.Stirinthesauce andjuice,grate ginger over and bubblefor2minutes.
2Inaseparate pan, stir-fry sprouts for 3-5 minutes.
3 Serve the sauce and sprouts onabedof noodles, topped with cashewnuts.
Just like pak choi and bok choi, sprouts work well with oriental flavours such as this quick-and-tasty noodle bowl.
