INGREDIENTS (PER PERSON)
Oil for frying
3-4 chestnut mushrooms, sliced % red pepper, sliced into strips
1 small red chilli, sliced
2 tablespoons rich hoisin sauce
1 tablespoon orangejuice Grated fresh ginger to taste 3-5 Brussel sprouts, halved Cashews and medium egg noodles to serve

Blue Cheese Sauce with « Toasted Sprouts and Walnuts
30-40g (1-1%oz) walnuts, chopped
This combination makes a tasty pasta topping and is also delicious with steak. It’s essential the nuts are freshly toasted for maximum contrasting crispness.
METHOD
IHeat creme fraiche in a heavy-bottomed pan until almost bubbling.Add the cheese, season with both peppers and remove from the heat. Stir until the cheese melts.
2 Add oiltoahot pan and stir-fry the sprouts and walnuts together for 3-4 minutes.
3 Serve thecheese sauce over pasta or steak and top with the sprouts andwalnuts.
