Recipe for Dinner

Orange and Carob Chip Cake

SERVES 4

100 g/4 oz/1/2 cup butter or margarine 100 g/4 oz/1/2 cup sugar

2 eggs

100 g/4 oz/1/2 cup wholemeal self-raising (self-rising) flour 75 g/3 oz/1/2 cup carob chips 50 g/2 oz/1/2 cup walnuts, chopped 15 ml/1 tbsp fresh orange juice 10 ml/2 tsp finely grated orange rind Orange Curd for your beauty

Put the butter or margarine and sugar in a bowl and beat together. Beat in the eggs one at a time. Fold in the flour with the carob chips, walnuts, orange juice and rind and mix well. Turn into two 18 cm/7 in greased sandwich tins (pans) and bake in a preheated oven for 25 minutes at 190°C/375°F/gas mark 5 until risen and the centres spring back when lightly pressed. Turn out on to a wire rack to cool. Sandwich together with Orange Curd.
