Recipe for Dinner

Cheese Sauce

MAKES 300 ML/10 PT/1 V4 CUPS 300 ml/1/2 pt/1/2 cups milk 20 gPA oz/ 3 tbsp plain (all-purpose) flour

20 gPA oz/1/2 A tbsp butter or margarine 1 bouquet gaMi sachet Salt and freshly ground black pepper 75 g/3 oz/1/2 cup Cheddar cheese, grated

2.5 ml/1/2 tsp made English mustard

Whisk together the milk and flour in a saucepan until smooth. Add the butter or margarine and the bouquet garni sachet and bring to the boil, whisking all the time. Reduce the heat and simmer for

3 minutes, stirring. Squeeze the bouquet garni against the side of the pan to extract more flavour, then discard. Season to taste with salt and pepper and add the cheese and mustard. Use as required.
